Makes 3½ Pounds
4 lbs. Apples
2 Cups Water Or Apple Cider
½ Cup Carob Syrup
2 tsp. Cinnamon
1 tsp. Cloves
1 lemon, Grated Rind, and Juiced
Cut the apples into pieces. Do not peel or core.
Place in a large saucepan.
Cover with water, and cook until soft.
Put through a strainer, Sieve.
Add sweetener, spices and lemon. Mix well.
Cover and cook over low heat until
the sweetener dissolves.
Uncover and cook quickly until smooth and thick,
stirring constantly with a wooden spoon.
Store in covered, airtight containers in the refrigerator.
Variations: Substitute fresh apricots, peaches or
plums for the apples.
