APPLE PUDDING
                        Serves 6-8

Ingredients:

6 Medium Apples, Unpeeled
1 Cup Whole Wheat Pastry Flour
or Brown Rice Flour
¾ Cup Date Sugar
¼ Cup
Non-Hydrogenated Margarine
½ Cup Raisins
½ Cup Chopped Walnuts or Pecans, optional
3 tsp. Baking Powder
1 tsp. Cinnamon
¼ tsp. Nutmeg
Non-Hydrogenated Margarine
for Baking Dish  
Soy Whipped Cream


Directions:

Preheat oven to 350 degrees.  
Grease the casserole or baking dish.
Wash and chop the apples.  Melt the margarine.
Combine all of the ingredients in a large bowl.
Pour the mixture into the baking dish.
Bake for 30 minutes, until the apples are soft.
Serve warm with
Soy Whipped Cream.
