BEET SALAD         
                            Serves 2


2 Beets
2 Tbsp. Lemon Juice
1/3 Cup Carob Syrup or Rice Syrup
1 Cup Rehydrated Pineapple Chunks
2 Large Lettuce leaves
1/2 Cup Walnuts (optional)


Soak dry, unsulfured, unsweetened pineapple in water
overnight.  Cut into small chunks.
Steam beets for 10 minutes.  Peel the beets, and return
to water and steam until fork soft.  Cut beets into small
chunks or slices.  Mix with pineapple chunks.
Mix syrup and lemon juice.  Combine with beets.
Add walnuts.  Serve on a bed of lettuce.
