3 Heads Cabbage
3 Medium Onions
15 Medium Tomatoes
6 Potatoes, Unpeeled
2 Cloves Garlic
1 Bay Leaf
½ Cup Carob Syrup or Rice Syrup
½ Cup Raisins
Juice of 2 Lemons
8 Cups Water
Wash and scrub all the vegetables.
Chop the onions and garlic.
Boil them in large pot with 4-6 cups of water, 1/2 Full.
Shred the cabbage.
Dice the tomatoes, and slice the potatoes and carrots.
Add tomatoes, potatoes, and carrots to pot.
Cover and simmer for 1 hour.
Add bay leaf and cabbage.
Cover and simmer another hour. Add more water if
desired. Add syrup, raisins and lemon juice.
Cover and simmer 20 minutes more. Remove bay leaf.
Serve hot, garnished with chopped mint leaves, sesame
seeds or fresh minced dill.
