COCONUT COOKIES
                     Makes 3 Dozen

Ingredients:

1 Cup Whole Wheat Flour (Or Brown Rice Flour)
2 tsp. Baking Powder
2 Cups Shredded Coconut
½ Cup Sunflower Oil
1 Cup Carob Syrup (Or Rice Syrup)
1 tsp. Vanilla
Non-Hydrogenated Margarine for Cookie Sheets

Directions:

Preheat oven to 350 degrees.  Grease 2 cookie sheets.
Blend the oil, syrup and vanilla in a large mixing bowl.
Add the remaining ingredients and mix well.
Drop by tablespoonfuls onto the cookie sheets,
and bake for 15 minutes.  Cool.
Variation:  Add 1 Cup carob powder and ¼ Cup soymilk
to step 3.
