CREAMY CAULIFLOWER SOUP

Ingredients:

1 Head Cauliflower
1 Medium Onion
4 Tbsp.  
Non-Hydrogenated Margarine
4 Tbsp. Whole Wheat Flour
3 Cups Soymilk
Fresh Parsley to equal ½ Cup
1 Package Miso Soy Seasoning
1 Carrot

Directions:

Wash cauliflower and break into flowerets.  
Finely chop parsley.
Chop onion.  Sauté in margarine in large pot
for 5 minutes.
Add flour and stir until paste forms.
Slowly add soymilk and stir until it thickens.  
Stir in seasoning.
Add cauliflower and parsley.  
Simmer, uncovered for ½ hour.
Garnish with grated carrot.
