DATE NUT BREAD
½ Cup Dates, pitted and chopped
1 Cup Boiling Water
2 Tbsp. Soy or Non-Hydrogenated Margarine
¾ Cup Date Sugar
2 Tbsp. Sunflower Oil
1 Tbsp. Grated Lemon Rind
2 Cups Whole Wheat Flour
2 tsp. Baking Powder
½ Cup Nuts, Chopped (Walnuts or Pecans)
Preheat oven to 350 degrees. Grease loaf pan.
Combine dates and water and allow to cool.
Dissolve the date sugar into the melted margarine.
Add oil and lemon rind and beat well.
Combine with dates and water.
Add flour and remaining ingredients and mix well.
Pour batter into greased pan.
Bake for 50 minutes, or until done.
