FIG BARS

Ingredients:

2 Cups Whole Wheat Flour
2 Tbsp. Soy Flour, or Rice Flour
2 Cups Dried Figs, Chopped
1 tsp. Baking Powder
¼ Cup Pure Vegetable Oil
½ Cup Carob Syrup
1/3 Cup Soymilk
1 tsp. Pure Vanilla Extract
Handful of Chopped Nuts, optional
Non-Hydrogenated Margarine for Baking Pan

Directions:

Preheat oven to 350 degrees.  
Grease an 8-inch square baking pan.
Blend the oil, syrup, soymilk and vanilla together.
Stir in the soy flour, baking powder and
whole-wheat flour.  Mix well.
Turn half of the batter into the baking pan.
Sprinkle all of the dried figs and nuts over the batter.
Cover the figs with the remaining batter.
Bake for 20 minutes.  Cool
Cut into bars about 1 inch x 3 inches.
