FLUFFY ORANGE ICING
5 Tbsp. Brown Rice Flour, or Soy Flour
½ Cup Cold Water
½ Cup Fresh Orange Juice
1 Cup Carob Syrup
5 Tbsp. Non-Hydrogenated Margarine
2 Tbsp. Grated Orange Rind
1 tsp. Pure Vanilla Extract
Put the flour, water and juice into a medium saucepan,
and cook over medium heat, whisking constantly until
thick and smooth.
Cool completely by carefully placing it into a pan of cold
water for 15 minutes.
Blend the remaining ingredients together, and whip into
the cooled flour mixture until fluffy.
Variation: For Fluffy Lemon Icing,
Substitute lemon juice and lemon rind for the orange.
