MACARONI WITH CAULIFLOWER                         
                     Serves 4-6


1 Head Cauliflower
1 lb. Whole Grain Ziti, or Whole Grain Elbows
4 Cloves Garlic
½ Cup Olive Oil
½ Red Pepper
Few Sprigs Parsley
6 Quarts Water
Vegan Parmesan Cheese.


Boil the water.
Wash and break up cauliflower into small pieces.  
Put cauliflowerettes into boiling water.
When water boils again, add the pasta
and cook until it is al dente.  Drain well.
In the meantime, mince the garlic and pepper and sauté
them in the oil until golden brown.
Pour over macaroni and cauliflower.  Mix gently.
Sprinkle generous amount of
Vegan Parmesan Cheese on top. Toss lightly.  
Garnish with few sprigs of parsley.
Variation:  Mix with:  Marinara Sauce or
Mushroom/Tomato Sauce.
