OATMEAL RAISIN COOKIES
2 Cups Rolled Oats
1 Cup Whole Wheat Flour
2 tsp. Baking Powder
½ Cup Pure Vegetable Oil
or Non-Hydrogenated Margarine
1 Cup Date Sugar
1 Cup Raisins
1 Cup Chopped Nuts, optional
2 tsp. Cinnamon
1 tsp. Pure Vanilla Extract
¼ Cup Soymilk or Water
Non-Hydrogenated Margarine for the Cookie Sheet
Preheat oven to 350 degrees. Grease 2 cookie sheets.
Blend the oil or Margarine with the soymilk and
vanilla in a large bowl.
Beat in the date sugar until smooth.
Add remaining ingredients and mix well.
Drop by teaspoonfuls onto the cookie sheets, and bake
for 10-15 minutes, until the undersides turn brown. Cool.
