Onion Soup

Ingredients:

6 Onions
½ Cup Sunflower Oil
6 Cups Water
2 Packages Miso Soy Seasoning,
or Vegetable Broth Cube
2 tsp. Tamari Soy Sauce
½ Cup Soymilk
8 Slices
Whole Wheat Toast
Grated  Vegan Parmesan Cheese

Directions:

Slice onions in rings.  Sauté in oil, in skillet
until transparent.
Mix water and seasoning in large pot.  
Add onion rings, and simmer uncovered for
½ hour to 40 minutes.  
Add soy sauce, soymilk, and stir.  Shut flame.
Let stand for 5 minutes.
Toast bread and cut into cubes, as croutons.
Sprinkle grated
Vegan Parmesan Cheese
and croutons on top.
