PINEAPPLE UPSIDE DOWN CAKE
3 Cups sliced Pineapple, or any fresh fruit
¼ Cup Non-Hydrogenated Margarine
2/3 Cup Date Sugar
1¼ Cups Whole Wheat Flour
1½ tsp. Baking Powder
½ Cup Soymilk
1 tsp. Grated lemon Rind
Cherries, pitted and de-stemmed, optional
Margarine for Pan
Preheat oven to 350 degrees.
Grease an 8-inch square or round baking pan.
Arrange the pineapple slices on the bottom of the pan.
Then add the cherries.
Melt the margarine and blend with the date sugar.
Add the soymilk and lemon rind to the sweet mixture.
Add remaining ingredients and blenderize or beat with
an electric beater for 2 minutes.
Pour the batter over the fruit in the pan.
Bake for 30 minutes. Invert immediately, then let cool.
