4 Cups Sliced Plums
1/3 Cup Carob or Rice Syrup
1 Cup Whole Wheat Flour, or Brown Rice Flour
½ Cup Boiling Water
½ Cup Soymilk
¼ Cup
Non-Hydrogenated Margarine
2 tsp. Baking Powder
1 tsp. Pure Vanilla Extract


Preheat oven to 350 degrees.
Combine the boiling water, plums, and sweet syrup in a
bowl and let stand.
In a separate bowl, mix the flour and baking powder.
Add the vanilla, margarine and soymilk to the flour.  
Mix until all the ingredients are moistened.
Pour the batter into an 8-inch square baking pan.
Carefully pour the fruit mixture gently over the batter.
Bake for 30 minutes.
Serve with
Soy Whipped Cream.  
Substitute pears, peaches or apples for the plums.
