Portabello Burgers                
                                Serves 4


4 Portabello Mushrooms
Your Favorite
Homemade Bread, Sliced
Tomato, sliced
4 Slices of  
Vegan Mozzarella Cheese
Balsamic Vinegar
Extra Virgin Olive Oil
Vegan Mayonnaise
Organic Ketchup


Clean and de-stem the mushrooms. Place mushrooms in
zip lock bag with a bit of balsamic vinegar and the extra
virgin olive oil.  Marinade for 20 minutes, or so.
Place marinated mushrooms on preheated grill, turning
only once, so make sure the grilled side is truly grilled.
Mushrooms can also be grilled on an indoor grill or pan.
In the meantime, slightly toast slices of your favorite
bread on the grill as well.  
Once the mushrooms are turned, place a slice of
Vegan Mozzarella Cheese on top of each
Portabello Mushroom.
When cheese is melty, remove from grill.  Put a dab of
Vegan Mayo on the slightly toasted bread, place the
mushroom on the bread with sliced tomato and arugala.
Top with a bit of ketchup, and the other slice of bread.  
Enjoy with a side of
French Fries, and Cole Slaw.
