3 Medium Potatoes
1 Small Onion
3-4 Tbsp. Whole Wheat Flour
½ Cup Pure Vegetable Oil


Wash and dice the potatoes.  Cut onion in large pieces.
Grate the potatoes and onion together, in blender or
grate by hand, until the mixture is smooth,
but still lumpy.
Mix in the flour, and stir well, until all excess liquid is
absorbed.  Add more flour if necessary.
Put a little oil in frying pan, over medium heat.
Spoon the batter into the pan and flatten out with the
back of a spoon into pancakes.  Or use spray oil on a
cookie sheet, and bake in oven.
Fry,or bake until both sides are a crisp golden brown.
Serve with
Homemade Sour Cream  Or vegan sour
cream from your Health Food Store or Supermarket.
Baked Apple Sauce, or Mixed Fruit Sauce.
