POTATO SALAD

Ingredients:

8 Medium Potatoes, Un-peeled
1 Small Onion
2 Stalks Celery
3 Carrots
Small Bunch Parsley
1 Cup
Vegan Mayonnaise

Directions:

Scrub potatoes well.  Boil or bake them, with skins until
tender.  Cool, and slice thinly.
Wash and finely dice celery, onion, and parsley.  
Shred carrots.
Mix all the vegetables and the potatoes together with the
Vegan Mayonnaise until thoroughly coated.
