POTATO SOUP
Ingredients:

2 Medium Onions
3 Stalks Celery
3 Carrots
6 lbs. Potatoes, Unpeeled
Small Bunch Parsley
A Drop of Sunflower Oil To Sauté
2 Cups Water
1 Package Miso Soy Seasoning, or
Vegetable Broth Cube, optional
½ - 1 Cup Soymilk

Directions:

Wash and dice all vegetables.
Sauté onions and celery in oil until transparent.  
Add water, potatoes, carrots, parsley and seasoning.  
Stir.  Simmer on low flame for 30-40 minutes.  
Fork test potatoes until firm, not mushy.
Add soymilk and mash, or blenderize until thick and
creamy.
Garnish with chopped parsley leaves, fresh sprouts, or
chopped chives.
