RED LENTIL CASSEROLE

Ingredients:

½ Cup Red Lentils
½ Cup Brown Rice or Pearled Barley
2-3 Ripe Tomatoes, 1/2 sliced, 1/2 chunked
1 Small Onion
3 Cups
Mushroom/Tomato Sauce
6 oz. Grated  Vegan Parmesan Cheese
Few Sprigs parsley
1 tsp. Basil
Oil For Pan

Directions:

Oil casserole dish or baking pan.  
Preheat oven to 350 degrees.
Chop onion and parsley.  
Put layer of sliced tomatoes in pan.
Next sprinkle a layer of chopped onions and parsley.
Spread layer of dry lentils next.
Now a layer of the tomato chunks.
Put layer of uncooked rice or pearled barley on top.
Pour Mushroom/Tomato Sauce
over the ingredients in pan.
Sprinkle
Vegan Parmesan Cheese on top.
Cover and bake for 45 minutes.
Uncover and bake for another ½ hour.
Serve with your favorite
Bread.
