1 lb. Whole Grain Rigatoni
Mushroom/Tomato Sauce, or Marinara Sauce
Grated Vegan Parmesan Cheese

Ingredients for Creamy Marinara:

1 lb. Tofu
1 Medium Onion
½ lb. Mushrooms, optional
1 Cup Alfalfa Sprouts, optional
1 Clove Garlic
1 Tbsp. Granulated Garlic
1 Tbsp. Oregano
½ tsp. Basil
Few Sprigs Parsley, finely chopped to equal ½ cup
¼ Cup Pure Vegetable Oil

Directions for Stuffing:

Rinse and mash the tofu.
Chop onion and garlic clove.  
Sauté in oil until transparent.
Add the tofu and all the ingredients.  Stir.
Continue to sauté for 10 more minutes.

Directions for Rigatoni Primavera:

Prepare the Creamy Marinara.  Prepare your Rigatoni.
Mix both with
Mushroom/Tomato Sauce or
Marinara Sauce.
Sprinkle with Grated
Vegan Parmesan Cheese.
Variation:  Mix in assorted steamed vegetables like
broccoli, cauliflower, brussels sprouts, etc., broken into
bite-sized pieces.
