SCRAMBLED TOFU WITH POTATOES
Serves 4
Ingredients:
1 lb. Tofu
1 Onion
4 Mushrooms
2 Medium Potatoes, Unpeeled
1 Tbsp. Granulated Garlic
1 tsp. Parsley
Vegan Bacon (optional)
½ Cup Shredded Cheddar Cheese

Directions:
Clean and slice the potatoes thinly into half rounds.
Fry in oil in large skillet.
Chop onion and mushrooms. Add to skillet.
Fry until potatoes brown on one side and onions
become transparent.
Turn the potatoes.
Add mashed tofu, Vegan Bacon and spices to skillet.
Scramble everything together, including
the vegan cheese.
Cover and simmer for 5 minutes.
Serve with Whole Wheat Bagel or Whole Wheat Roll.
