Serves 4-6


1 lb. Whole Grain Spaghetti
6 Medium Zucchini
1 Clove Garlic
½ Cup Olive Oil
½ Cup Grated  
Vegan Parmesan Cheese


Boil water
Wash and cut zucchini into thin rounds.  
Discard the ends.
Finely chop the garlic clove.  
In a large skillet, sauté the garlic in oil over
medium heat.
Add the sliced zucchini and sauté until golden brown.  
Do not over cook the spaghetti.
Pour zucchini and oil mixture over cooked spaghetti.
Sprinkle with grated  
Vegan Parmesan Cheese and
toss until zucchini is well coated.
