Serves 4


1 lb. Fresh Spinach
½ lb. Mushrooms
½ Small Onion
2 Tbsp. Grated  
Vegan Parmesan Cheese.
1/3-1/2 Cups Oil
¼ Cup Lemon Juice
1 Carrot (optional)


Wash spinach leaves carefully.  Tear with hands into
small pieces.  
Clean mushrooms and slice them thinly.  
Finely slice onion.
Toss all ingredients together in a salad bowl.
Grate the carrot and sprinkle on top.  
Also garnish with whole-wheat croutons.
