Serves 6


1 Cup Brown Rice, Cooked
Shredded Vegan Mozzarella Cheese
1 lb. Spinach
1 Medium Onion
¼ cup Sunflower Oil
Few Sprigs of Parsley
2 Tbsp. Wheat Germ
1 Tbsp.
Non-Hydrogenated Margarine


Cook ½ Cup Brown Rice in 1 Cup boiling water.  
Cover and simmer for 30-40 minutes.
Mix the cooked rice with some of the
Shredded Vegan  Mozzarella Cheese.
Chop the onion and parsley and sauté in the oil.
Mix in the spinach.
Preheat oven to 350 degrees.  Oil a baking dish.
Combine the spinach mixture with the rice mixture.
Mix the margarine with the wheat germ,
and sprinkle on top.
Bake for 30 minutes.
Serve with steamed carrots or beets.
