2 Cups Whole Wheat Pancake Flour
¼ lb. Firm Tofu
1-2 Cups Sunflower Oil,
Oil should be at least 1 inch deep in skillet.
Sweet & Sour Sauce
Use Any of the Following Raw Vegetables:

Cauliflower, Onions, Broccoli, Mushrooms, Peppers,  
Brussels Sprouts, Zucchini, & or Eggplant.


Wash and cut up the vegetables into small pieces.
Mash the tofu, and mix with 1 Cup of water.
Add to pancake flour, and stir well.
Add 2 Tbsp. oil, and more water until batter is smooth.
Heat oil in skillet over medium heat.
Dip vegetable pieces in batter until completely coated.
Fry in oil until golden brown on both sides.
Drain, and serve with
Sweet & Sour Sauce.
Variation: Tofu Tempura:  
Cut 1 lb. Tofu into cubes.
Pour a little soy sauce on each cube.
Sprinkle garlic and parsley on each.
Dip and coat with batter.
Deep fry in 1-inch oil until golden brown.
