Serves 6 - 8


1 lb. Tomatoes
1 Cup Soy Beans, Dry
1 Cup Brown Rice
½ lb. String Beans
1 Green or Red Pepper
1 Medium Onion
2 Stalks Celery
2 Carrots
1 tsp. Tamari Soy Sauce
1 Cup Water
Vegan Parmesan Cheese


Soak the beans overnight, and then boil in their own
liquid for 10-15 minutes until tender.  
Or Pressure-cook them for 45 minutes to 1 hour.
Cook the rice in 2 Cups boiling water.  
Simmer, covered, for 40 minutes.
Chop the tomatoes, string beans, pepper, onion,
celery and carrots.
Put all of the vegetables and the water in a large pot
and cook over medium heat for 20 minutes.
Add the cooked rice and beans to the pot.
Simmer on low flame for 15 minutes.
Variations:  You can add any combination of
vegetables to this basic stew recipe.
Serve sprinkled with
Vegan Parmesan Cheese.
