VERMICELLI WITH PEAS
1 lb. Fresh Peas in Pods
1 lb. Whole Grain Vermicelli
6 Tbsp. Non Hydrogenated Margarine
1 Small Onion
½ Small Red Pepper, optional
½ Cup Grated Vegan Parmesan Cheese
1 Clove Garlic
Steam the peas. Remove the pods.
Boil the water. Prepare the pasta al dente.
Melt the margarine in saucepan.
Finely chop the onion, garlic clove, and pepper and
add to the saucepan.
Sauté until the onions are transparent.
Pour mixture over hot cooked vermicelli and peas,
and stir gently.
Sprinkle Grated Vegan Parmesan Cheese on top
and toss lightly.
