ZUCCHINI BREAD                
1 Loaf


3 Cups Whole Wheat Flour
1½ Cups Date Sugar
1 tsp. Cinnamon
1 tsp. Baking Powder
3 tsp. Baking Soda
2 Cups Shredded, unpeeled Zucchini
1 Cup Chopped Nuts (Walnut or Pecans)
1¼ Cups Oil (Sunflower or Sesame)
1 Cup Raisins


Preheat oven to 350 degrees.  Grease 10-inch loaf pan
with soy or
Non-Hydrogenated Margarine.
Mix all dry ingredients together in a large bowl.
Pour oil over flour mixture and stir until moistened.
Turn ingredients into greased loaf pan.
Bake for 1 hour 30 minutes, until a toothpick
comes out clean.
Cool for 10 minutes.
Turn upside down to remove from pan, and cool 10 more
minutes before serving.
