Serves 4 - 6


8 Medium Zucchini
½ Cup Whole Wheat Bread Crumbs
1 Medium Onion
1 Clove Garlic
¼ cup Melted
Non-Hydrogenated Margarine
Shredded Vegan Mozzarella Cheese
Oil for Baking Dish


Wash zucchini and slice.  Chop the onion and the garlic.
Place the zucchini in a saucepan with ½ inch of water
and the chopped garlic.
Cover and cook for 10 minutes, until tender.
Drain, but save the liquid for future broth.
Mash or blenderize the zucchini until it is the
consistency of a lumpy puree.
Preheat oven to 350 degrees.  Oil a baking dish.
Combine the zucchini with the margarine, chopped
onion and bread crumbs.
Put the mixture in baking pan and cover with:
Vegan Shredded Mozzarella Cheese.
Bake for 30 minutes until brown on top.
Variation:  You can substitute 1 Cup Cooked Brown
Rice for the bread crumbs.
