EGGPLANT PARMIGIANA
                    Serves 4 - 6

Ingredients:

1 Large Eggplant
1 Cup Whole Wheat Flour or
Whole Wheat Bread Crumbs
1 Tbsp. Garlic
1 Tbsp. Oregano
1 tsp. Basil
1 tsp. Parsley
Pure Vegetable Oil for Frying
(or) Spray Oil for Baking Sheet
½ Cup Soymilk or
Homemade Sour Cream
Mushroom/Tomato Sauce,  or Marinara Sauce
as needed, or you can use Your Favorite Sauce.
Vegan Mozzarella Cheese


Directions:

Mix flour and spices in a large, wide bowl.
Wash and cut eggplant into ¼ inch rounds.
Dip in soymilk or sour cream.
Coat on both sides with seasoned flour or bread crumbs.
Fry until browned on both sides.
Or you can use a spray oil on a baking sheet, and
bake for 10 minutes on each side.
Preheat oven to 350 degrees.
Put a thin layer of the sauce in a baking pan.
Spread out the fried eggplant in the pan.
Cover with sauce.
Top with a layer of
Vegan Mozzarella Cheese.
Repeat eggplant, sauce and cheese.
Bake until cheese bubbles and browns.
Serve with thin Whole Grain Spaghetti or Ziti.
